Chardonnay from selected vineyards in the Riverina, chosen for their intense varietal characters. Warm fermentation and a wide variety of yeast strains were used to add complexity and texture. 20% of the blend went through malolactic fermentation and 30% of blend was fermented on American oak Staves for up to 20 days. This wine is full of peach and nectarine fruit with a gentle hint of toffee oak. Soft and creamy on the palate, the acidity is clean and fresh and the finish long and fruity.
